Welcome, Grumpster.

A barycenter is a natural consequence of creating a simulation that has 2 or more bodies with mass.  To view the barycenter, you use the [F] / [A] button on the graphics options interface.  This toggles you between having one of the objects locked to the middle of the screen, or locking the barycenter to the middle of the screen.

Example:
File > New
Objects > Create Objects
Make an object 0.5 solar masses at 0.1 AU.  Give it a size of 600,000 km.  Leave all other values at their default settings.

Use the [-] button on the Screen Scale interface to zoom out so you can see both of your objects.
Turn off the trails using the [T] button on the Graphics Options interface.
Turn on the floating mode using the [F] button on the Graphics Options interface.
Speed up the time step using the [+] button on the Time Step interface.

You should now have 2 objects orbiting a barycenter.

If what you want is the actual Pluto system, go the the Simulations link.  There is a Plutonian System simulation there for you to download.  Charon should be accurate according to JPL's numbers.  Hydra and Nix are my best guesses, as official data has yet to be released.
